Runako Designs - Recipes

What better time to be posting recipes than during the months of November and December? Thanksgiving is two weeks away and the day after, you'll be looking for things to make with your left over turkey. Why not try this delicious Orzo Turkey Salad recipe from Ukrops.

Orzo Turkey Salad
1 lb orzo
2 tbsp fresh oregano or 2 tsp dried
1/2 cup chopped fresh parsley
Salt to taste
freshly ground black pepper to taste
3 tbsp extra-virgin olive oil
1 lb turkey breast cutlets or steaks, cut into 1-1/2-inch cubes
3 tbsp finely chopped shallots
1 cup defatted chicken broth
2 tbsp balsamic vinegar
1/2 red bell pepper, cored, seeded and diced
1/2 cup frozen peas
2 scallions, trimmed and chopped
